
In essence, brewing beer is simplicity itself. You need malt, water, hops and yeast. All you have to do is mix, stir, boil and ferment. What could be easier?
There is, of course, more to it, which is why there is such a delightful variety of beer in this country, and why McMullen ales have been so sought after for over 180 years.
The differences lie in natural ingredients and the knowledge, skill and care of Chris Evans, our Head Brewer and his team.
Beer begins with malt and water. We work with England’s leading maltsters who, knowing our exacting standards, turn the best English barley into the malt that gives just the right colour and body to our ales.
The new brewery is built on the same site as its two predecessors so continues to use the 60-metre deep well gives us our unique supply of fresh spring water.
Unlike most other brewers our latest brewery continues to use whole natural hops straight from the sack which is why It Is called 'The Whole Hop Brewery'. We just do not believe that using processed pellets or hop extracts are good for the image of traditional and authentic brewers of fine cask ales. We know our hop growers, most of whom grow classic varieties in the garden counties of England. However, not afraid to travel in the interests of good taste, we also work with farmers in Slovenia who grow just the right Styrian Goldings for our new beer, McMullen Cask Ale.
The new Whole Hop Brewery has been designed by our Head Brewer, Chris Evans, to ensure we consistently produce ales that meet stringent high standards that reassure cask ale connoisseurs, including our own regulars.
In a modern, clean and efficient brewhouse, Chris has precise control over, temperature, clarity, colour, taste and the time taken during each process. Nothing can be done to replace his skill and care, but everything is done, from the brewery to the beer engine, to make sure that the cask ale you drink is the beer that Chris intended, every time.
