The Ultimate Beer Pancakes

"Pancake Day is everyday especially when made with beer!" we say.

Typically Britain talks pancakes for Shrove Tuesday of every year but we think pancakes are worth talking about everyday. We love them for - breakfast with yoghurt & seasonal fruit or the savoury kind with crispy smoked bacon & maple syrup - or to reminisce on how mama made them for a quick dessert on school night with the simple yet delicious toppings of lemon and sugar.

As a British brewer we find it quite fitting that beer can be used to cook with and make pancakes. We thought we'd attempt to recreate a dairy free pancakes recipe spotted on The Craft Beer Channel. We replaced the milk of a traditional pancake recipe with our latest bottled craft beer Pale Ale (abv 4.1%), a lightly hopped and golden well balanced beer with hints of citrus and spicy berries.

Berry Beer Pancakes (Dairy-Free)

Ingredients

Makes about 10 pancakes
3 rashers quality smoked back bacon per person
1 mug of self-raising flour
1 egg
1 mug of lightly hopped McMullen's Pale Ale (about a 330ml) - or alternatively a full-bodied IPA
Olive oil
1 punnet of blueberries
Maple syrup

Method

Step 1-2: Sieve your flour into a mixing bowl

Step 3-5: Then crack in the egg. Using the whisk, beat the mixture while adding the beer gradually so it doesn't foam over.

Step 6-7: Add the oil to a pre-heated frying pan. Once happy add a ladleful per pancake.

Step 8: Then fry until the bubbles on the surface pop, then flip them. 

Step 9-10: Once cooked stack them on a plate. Roll your pancakes and top up with fruit, then drizzle over as much maple syrup as you dare!
